Spicy homemade blue plum sauce for the winter

For the preparation we need:
blue plums - 1 kg;
garlic - 4 teeth;
salt - 1-1.5 tsp. (taste);
sugar - 1 tsp;
water - 75 ml;
parsley - 1 bunch;
ground black pepper - 0.5 tsp;
Provençal herbs - 0.5-1 tsp. (taste).
How to make plum sauce for the winter
The first thing you need to start cooking is an unnecessary amount of blue plums. A variety of blue plums called Ugorka is perfect for the sauce.
Leaves, tails and other debris should be removed from the fruit and washed.
Pour into a convenient container and fill with water. Send to the fire. Simmer the plums over low heat until they become soft (about five minutes).
Press the plums through a sieve to remove pits and skins. Pour the plum puree into a small saucepan.
Peel the garlic and wash it. Wash the parsley under running water. Prepare spices.
Place the plum puree on the fire. Squeeze the garlic into it. Add pepper, herbes de Provence, salt and sugar and stir.
Cook over low heat for about 10 minutes. Chop the parsley and add at the end. Mix again.

Roll them up with a special key, turn them over and leave until completely cool.
Place cold jars in a dark place for storage.
This spicy blue plum sauce can be stored for about 2 years. During this time, it does not lose its taste, it turns out spicy, aromatic and incredibly tasty.
