This tomato sauce will completely replace store-bought ketchup, but at the same time it will be incomparably healthier. Homemade tomato sauce uses absolutely no preservatives, not to mention artificial flavor enhancers. Therefore, I propose to get down to work together.

How to prepare tomato sauce for the winter.

Ripe tomatoes

Take ripe tomatoes, you can even burst and damaged ones.

Cut out the bad spots, and chop the rest of the raw materials into medium-sized pieces of arbitrary shape.

Place everything in a cooking container and put it on fire.

After waiting for the tomatoes to release their juice, pass them through a sieve.

Now, you need to weigh the resulting puree mixture and record its weight. For 2.5 kg of such puree you will need 150 g of sugar and 25 g of salt.

Boil the puree by half, and then add sugar and salt to it.

In a small gauze bag put three chopped cloves of garlic, two or three buds of cloves, 10 pieces of allspice, 10 pieces of black pepper, a piece of cinnamon. Place the bag in the sauce and secure it with a thread to the handle of the pan so that it can be easily removed later. Cook like this for 15 minutes.

Remove the bag with spices, and pour the hot spicy tomato sauce into bottles/jars with screw caps and sterilize by boiling for at least 30 minutes.

Store spicy tomato sauce like all other canned goods and preparations - in the cold and dark.In winter, serve with spaghetti or any meat. We can make pizza and many other delicious dishes with it.
