Refreshing mint juice - how to prepare and store for the winter

Mint juice can be prepared if there is not as much mint as you would like, and you do not like the other method of preparation. You can, of course, dry mint, but then you have to brew it, and this is a waste of time and most of the aroma. It is better to use a simple recipe for making mint juice.

To prepare mint juice, you need freshly harvested plants - stems and leaves. It is better to collect mint the day after rain. This will make the stems and leaves more juicy and aromatic.

Select dry and yellowed leaves, they will not be useful to you, and dip the mint again in a deep bowl of water.

Place the mint on a cutting board and chop into smaller pieces. In principle, this is not necessary, but then you will need to twist the mint through a meat grinder, or grind it in a blender, and long stems can wrap around the knives and slow down the work.

So, grind the mint into a pulp in the way that is most convenient for you, and now you can make juice by adding the following ingredients:

For 200 grams of mint pulp:

  • 200 grams of water;
  • 100 grams of sugar;
  • Juice and zest of one lemon.

Pour chopped mint with water, add sugar, lemon juice and zest. Place the saucepan on the fire and, stirring, bring to a boil. Turn off the heat and let the juice sit for 1 hour.

Strain the juice into another saucepan and boil it again.

There is no need to boil mint juice; just bring it to a boil and quickly pour it into sterile bottles with lids.Also, a great addition to your preparations will be mint syrup, which is not at all difficult to prepare.

With this method of preparation, mint juice can be stored for 8-10 months in a dark, cool place.
