Quick vegetable salad with rice for the winter
Preparing bell peppers with rice according to this recipe is very simple and quick. I must say that a delicious vegetable salad with rice prepared for the winter according to this recipe has some advantages. Firstly, it is quick to prepare.

The longest process is waiting for it to cook. Secondly, you can remake it for yourself and experiment as much as you like. I'll just be careful about one thing - don't add more than a glass of rice, otherwise the preparation will be solid rice and it will turn out dry.
We will need :
- 3 kilograms of tomatoes;
- 1 kilogram of pepper;
- 1 kilogram of carrots;
- 1 kilogram of onions;
- 1 cup rice;
- 3 tablespoons salt;
- 1 cup of sugar;
- 300 grams of vegetable oil;
- Bay leaf;
- peppercorns.
How to prepare vegetable salad with rice for the winter
First we need to select good vegetables, wash and peel them. The next step is to prepare each vegetable for cooking.
Tomatoes can be cut into rings, cubes or, like me, half rings.
The carrots need to be grated on a coarse grater.
You can cut the pepper however you like, I cut it into large cubes.
The onion needs to be cut into medium cubes. A large one will stand out too much in the salad, while a small one will become overcooked.
Place all chopped ingredients in a cooking pan, add salt/sweeten/pepper, add vegetable oil and cook over low heat.
After boiling, cook for approximately 40 minutes.
At the very end you need to add vinegar, bay leaf and peppercorns. Boil for another five minutes.
Now, you need to fill clean jars with salad, up to the jars’ shoulders.
And roll up with clean lids. Wrap the vegetable salad with rice until it cools, and then put it in a cool place for storage.
This quantity of products yields approximately 9 jars of 0.7 liters of salad.
Another huge plus of this winter salad is that it is independent. Since it contains rice, the preparation turns out to be satisfying and can be used as a side dish in winter. But with boiled potatoes, butter and herbs, this quick vegetable salad with rice is absolutely delicious. Bon appetit.
