Watermelon marshmallow: how to make delicious watermelon marshmallow at home
Pastila can be prepared from almost any fruit and berries. You just need to choose the right recipe and don’t be afraid to experiment. A very beautiful and tasty marshmallow can be made even from watermelon. Some people prepare marshmallows only from watermelon juice, others exclusively from the pulp, but we will look at both options.
Watermelon pastille
It happens that you made a bad choice at the market and were given an unsweetened or very overripe watermelon. In overripe watermelons, the pulp is more like a sponge; it is limp and fibrous. Such watermelons are not very tasty and it is impossible to correct this taste, but you can make pastille from it.
Wash the watermelon thoroughly, dry it with a towel and cut it into pieces.
Remove the seeds, grind with a brander and squeeze out all the juice thoroughly. Try the pulp, and if it is not very sweet, add a couple of spoons of honey to it. You should end up with a liquid “porridge” of watermelon pulp.
Prepare a dryer, grease the marshmallow trays with vegetable oil, lay out the watermelon pulp and smooth it with a spoon. The layer should be no thicker than 0.5 cm, otherwise the marshmallow will be too rough. Dry watermelon marshmallows in an electric dryer at a temperature of +55 degrees for 4 hours, then reduce the temperature to 40 degrees and dry until ready.
Watermelon pulp pastille retains its pink color and can even be used to decorate desserts.
Watermelon juice marshmallow
Honey is made from watermelon juice, and the technology is the same when preparing marshmallows.
Do you still have juice from the previous recipe? Filter it thoroughly through double folded cheesecloth and pour into a saucepan.
Turn on the lowest heat possible and simmer the juice very slowly. Watermelon produces foam when boiling and needs to be removed from time to time with a slotted spoon. The cooking time depends on the sweetness of the watermelon itself. The sweeter one boils down a little faster, but in any case, count on at least 3 hours of cooking. The consistency should be like flower honey.
On average, three kilograms of watermelon juice yields 450 grams of watermelon honey. During the cooking process, watermelon honey darkens somewhat, gradually turning from soft pink to golden brown. This is fine.
Cover a baking sheet with baking paper, grease it with vegetable oil and pour the watermelon mixture onto the baking sheet in a thin layer.
Turn on the oven to +100 degrees and place the baking sheet in the oven. Do not close the door and dry the marshmallow for about 6-8 hours.
Check the dryness of the marshmallow with your hand. Gently touch the center of the marshmallow with your palm, and if your hand remains dry, then the marshmallow is ready. If not, then lower the temperature slightly and dry at a lower temperature.
Cut the finished marshmallow into squares, sprinkle with powdered sugar and you can try which recipe you like best.
