For 1 kg of hawthorn berries you need 200 grams of sugar. But it doesn’t matter, you add the amount of sugar yourself. It is necessary to take into account the variety of hawthorn and its taste. Maybe instead of sugar you lack sourness?

Cook the hawthorn until it is soft and has a jam-like consistency. This usually takes about 30 minutes.

Cool the jam, and then the most difficult part begins - getting rid of the seeds. Hawthorn seeds are quite large and hard, like grapes. It’s very difficult to chew them, so you shouldn’t be lazy here, so as not to ruin the mood for yourself and your loved ones later. Grind the hawthorn through a fine sieve and you can consider it done.

Wooden kitchen boards are great for drying marshmallows. Spread the thick jam onto the boards and place them in the oven.

Set the temperature to no more than +70 degrees and do not close the oven.To speed up drying, you can place a small hood fan next to the oven, just make sure that the air pressure does not extinguish the gas. We only need to speed up the air circulation a little to reduce drying time.

Under normal conditions, drying in the oven takes 6-8 hours, and the marshmallow is considered ready when, when you press on it, it remains in its original form and your fingers are not stained with juice.

Recipe 2 - marshmallows without cooking in an electric dryer

This recipe is suitable for supporters of a raw food diet. As you understand, here we will do without cooking “jam” and will make puree from raw fresh berries.

Place the hawthorn in a colander and pour boiling water over the berries. This will wash them out and make them juicier.

Next, the hawthorn berries need to be chopped, and then let’s see what kitchen helpers we have. A juicer is perfect for soft fruits. You will get rid of the seeds and get hawthorn juice along with pulp. If you don’t have a juicer, you can use a meat grinder and then grind the pulp through a sieve.

You can add honey or sugar to the resulting juice for better thickening and plasticity of the marshmallow.

Raw hawthorn puree is quite liquid, so it is better to use an electric dryer. Place the puree on marshmallow trays and turn on the medium drying setting for 6-8 hours. Then reduce the temperature to low and dry for another 2 hours.

Cut the finished marshmallow into “sweets”, sprinkle with powdered sugar and serve as a very tasty and extremely healthy dessert.
