Melon marshmallow: how to make marshmallow at home

Any dessert that contains melon automatically becomes the king of desserts. The light and incredibly delicate aroma of melon enhances any dish. In order not to lose this aroma, you need to be extremely careful in selecting ingredients that go with the melon.

Honey, lemon, kiwi, and sour apples go well with melon, that is, those products that do not interrupt, but emphasize and diversify the sweet taste of melon. Melon makes an excellent marshmallow.

Choose ripe melon for making marshmallows. Wash it thoroughly under cold running water, dry it with a towel and cut it in half. Remove the seeds and cut off all the skin.

Cut the melon into small pieces and place them in a saucepan.

For 1 kilogram of chopped melon you need 2 glasses of water, 1 glass of sugar or honey. Place the pan over low heat and cook the melon until soft.

At the end of cooking, you can add lemon zest.

Cool the melon “jam” and blend with a blender until you obtain a homogeneous puree. The puree must be thick enough, otherwise drying will take a long time.

Lubricate the tray of the electric dryer with refined vegetable oil, spoon out the puree in a layer no thicker than 0.5 centimeters, and carefully smooth everything out.

In the average mode of the electric dryer (Medium), dry the marshmallow for the first four hours, then in the weakest mode (Low) dry for another 4 hours.

You should remove the marshmallow from the trays when it is still warm. Roll the pastille and cut into slices.

You need to store the marshmallow in the refrigerator, wrapping the rolls in cling film, which will protect the marshmallow from drying out.
