Homemade yogurt paste
Yogurt pastilles, or “yogurt candies,” can be made from either homemade yogurt or store-bought yogurt. Moreover, the presence of “live bacteria” is not necessary here. The main thing is that the yogurt is thick enough. If you like soft and tender marshmallows, then for this you need to take full-fat yogurt. Low-fat becomes brittle and brittle, like chips, but the taste does not suffer from this.
How to make homemade marshmallows from yogurt and chocolate
For 10 trays of an Isidri electric dryer you need:
- homemade yogurt - 1.7 liters
- banana -5-6 pieces
- chocolate bar
- honey - 50-75 gr.
- nuts - 100 gr.
Instead of nuts, you can use any other topping: poppy seeds, sesame seeds, coconut flakes and others, but chocolate loves nuts.
Pour the yogurt into a bowl, add the peeled bananas and blend with a blender until smooth.
Melt the chocolate in a water bath, or grate it on a fine grater and mix with the yogurt mixture. Add honey and beat well again.
Lubricate the dryer trays with vegetable oil. It is better to take olive or refined sunflower oil for this. They are odorless and do not spoil the taste of the marshmallow.
Fill the dryer trays with the yoghurt mixture. Carefully distribute the mixture over the entire tray, making the layer a little thicker around the edges. The edges dry faster in the dryer, so in order for it to be removed from the pallet better and not dry out, it is better to take care of this in advance.
Sprinkle the mixture with grated nuts and you can put the yogurt in the dryer.
To dry the marshmallow, you need to set the temperature to +50 degrees and wait 10-12 hours until it dries.
Check the degree of readiness of the marshmallow in the central part. If it is dry in the center and does not stick to your hands, then the marshmallow is ready.
While the marshmallow is warm, remove it from the trays and roll it into rolls.
Cut into pieces and try.
You should definitely store yogurt marshmallows in a closed glass jar in the refrigerator. Pastille containing yogurt or any other dairy product can be stored in the refrigerator for no more than one month.
