Gelatin marshmallows: how to prepare tender gelatin marshmallows at home
Pastila, based on gelatin, turns out very tasty and tender. Its texture is very similar to a store-bought product. But it’s not always possible to buy fresh marshmallows made entirely from natural ingredients. Today we will talk in detail about the basic principles of making gelatin marshmallows at home, and also present the most popular recipes for preparing this delicacy.

Apple marshmallow with gelatin
Ingredients:
- apples – 500 grams;
- granulated sugar – 400 grams;
- egg white – 1 piece;
- gelatin – 20 grams;
- water – 60 grams;
- powdered sugar and corn starch - 1 teaspoon each.
Preparation:
It is better to use sweet and sour varieties of apples. Before cooking, they are thoroughly washed, cut into quarters and the seed box is removed. Then they are placed on a baking sheet and baked in the oven until cooked. To save time, apples can be cooked in the microwave. This will take 5 – 6 minutes at maximum power of the device. You can also simmer the fruit on the stove, covered, for 15 minutes, adding a small amount of water.
The finished apples are rubbed through a sieve to remove the skins.
Add 250 grams of sugar to the hot puree and mix it thoroughly.
After the mass has cooled, add the egg white and beat everything with a mixer until the puree turns lighter and increases in volume. The exposure time depends on the power of your mixer. This procedure usually takes 10–15 minutes.
While the apple-white mixture is whipping, prepare the gelatin. It is soaked in 60 grams of water. If your gelatin is not instant, then you need to fill it with water before you start cooking the apples.
The remaining sugar is added to the swollen gelatin. To dissolve the gelatin and sugar, the bowl is heated over low heat to a temperature of 60 degrees. Gelatin cannot be boiled.
The finished sweet gelatin syrup is introduced in a thin stream into the apple-egg mass, continuing to stir with a blender at low speeds. Exposure time – 5 minutes.
Meanwhile, prepare a container for the marshmallow. Line the baking tray with baking paper, foil or cling film. To make the pastille less sticky, you can lubricate the surface with a thin layer of vegetable oil.
The finished apple mass is placed in a mold and placed in the refrigerator for 10 - 12 hours.
After this, the marshmallow is taken out, cut into portions and generously sprinkled with a mixture of powdered sugar and starch.

Pastille with gelatin on syrup without egg whites
Ingredients:
- syrup – 150 milliliters;
- gelatin – 40 grams;
- juice – 180 milliliters;
- powdered sugar and corn starch - 1 teaspoon each.
Preparation:
You can use any syrup, for example, maple or apple.If you prepare the syrup yourself, you will need 350 grams of granulated sugar, 150 grams of water and a tablespoon of honey. All ingredients are simmered over low heat until thickened for 10 - 15 minutes.
You can use any juice, for example, apple, currant or orange.
Gelatin is poured with half the volume of juice and allowed to swell well. This will take 5 – 10 minutes.
The swollen gelatin is placed on the fire and, with constant stirring, it is completely dissolved. In this case, the heating temperature of the liquid should not exceed 60 degrees.
At the same time, on another burner, bring the syrup to a boil.
The hot syrup is introduced into the gelatin in a thin stream, and then the contents of the bowl begin to be thoroughly mixed with a mixer.
Add the remaining juice in small portions and continue beating the mixture for 20 minutes.
The finished marshmallow is placed in a mold lined with wax paper or foil.
After being in the cold for 12 hours, the marshmallow is taken out, cut into pieces and sprinkled with powdered sugar.
To ensure that the slices acquire a crispy crust, they are dried at room temperature for 2 to 3 hours.
Pastille with gelatin from fruit baby puree
Ingredients:
- puree – 1 jar (200 grams);
- sugar – 1 tablespoon;
- chicken proteins – 2 pieces;
- gelatin – 2 tablespoons;
- powdered sugar for sprinkling.

How to store gelatin pastilles
