tomatoes - 5 kg;
onions - 3 pieces;
bay leaf - 3 pieces;
sugar - 200 grams;
red pepper - 0.5 teaspoon;
black pepper - 1 teaspoon;
cinnamon - 1 teaspoon;
salt - 4 teaspoons.
How to make spicy sauce for the winter
Take the tomatoes and wash them thoroughly. I put them in a large basin. Then, I wash each tomato and transfer it to another bowl. I put the tomatoes through a juicer.
After that, put the pan with the juice on the stove and add the onion, which we cut into halves. We also add bay leaf and salt. Turn on the stove and cook for about 25 minutes. First, it is advisable to remove the foam that forms on the surface.
Take out the onion with bay leaf and add cinnamon, sugar, black and red pepper. Next, we continue to cook until half of the resulting juice remains. This may take approximately 2 hours. The cooking time also depends on how thick you want the sauce to be.
While the tomato stock is cooking, sterilize jars and pour the sauce.
