We begin preparing sausage by selecting and preparing raw materials. Buy a pork loin weighing one kilogram. Choose the longest piece that is the same thickness. It will be very good if the meat has a thin layer of fat.

Make a fragrant powder from 15 grams of salt, 5 grams of sugar, 3 grams of ground black pepper, 3 laurel leaves crushed into powder and 2 crushed juniper berries.

Rub the mixture thickly onto the meat pieces, place them in a container and let them stand in the refrigerator for 24 hours.

After a day, dry the meat pieces with napkins, wrap them tightly in sheets of cellophane or parchment paper and tie them on top with twine.

Next, place the sausage in the smokehouse and keep it over cold smoke until the product is completely cooked.

Polendvitsa, if you strictly follow the technology of its preparation, can be stored even in a cold pantry or basement for a long time. If there are none, then keep delicious fillet sausage in the refrigerator.
