To prepare healthy rhubarb jam, you need to prepare 1 kg of peeled cuttings and 1.5 kg of sugar. To prepare the syrup, dissolve 1.5 kg of sugar in 1 liter of water and boil for a couple of minutes.

Wash the rhubarb petioles, remove fibers and skin and cut into small pieces. Under running water, you need to rinse the prepared rhubarb stems again.

Place prepared food into boiling water rhubarb for a few minutes. Quickly remove the stems from the boiling water using a slotted spoon and cool them in a bowl of cold water. Drain the water from the cooled rhubarb stems and place them in a colander. Then put the rhubarb into a saucepan and pour hot syrup over it. Bring the contents to a boil over low heat and cook for about 2-3 minutes. Remove from heat and set aside.

After about half an hour, bring to a boil over low heat again. Boil for a couple of minutes and set aside again for half an hour. In the same sequence, we repeat all steps 3 or 4 times, avoiding a violent boil.
