We sort out fresh, just picked berries and pour them into a bowl, sprinkling them with sugar.
Leave them for 8 – 10 hours, and then cook until tender.
When we cook, we should take turns heating and cooling the berries, for example: first heat the berries to a boil and boil for several minutes, then remove from heat for 20 minutes, then heat to a boil again. This needs to be done several times (5-6) until our strawberry jam is ready.
Sugaring is a common problem encountered when making strawberry jam. In order to avoid this unpleasant moment, add citric acid at the end of cooking. Pour the cooled jam into dried and washed jars.
For 1 kilogram strawberries we need:
1.2 – 1.5 kilograms of sugar;
1 – 2 grams of citric acid.
