Preparing blueberries
Freshly picked blueberries should be processed as quickly as possible. This is due to the fact that blueberries turn sour very quickly and lose their shape.
The berries are sorted after picking. Severely damaged and rotten fruits, as well as twigs and leaves accidentally falling into the basket, are excluded from the total mass.
You need to rinse the berries in more water, removing small portions with your hands and transferring them to a colander. If you picked the berries yourself and did not purchase them at the market, then you can simply rinse the blueberries with water directly in the sieve.
Before you start cooking, let the blueberries dry out a little.
If the berry was frozen, then it is first thawed. To do this, put the blueberries on a plate and place them in the main compartment of the refrigerator. The berries should be slowly defrosted for 10 - 12 hours at a temperature of +4...+6 ºС, and then at a temperature of +20...+25 ºС.
Two basic blueberry jam recipes
Method No. 1
One kilogram of raw berries is crushed in a blender. Place the puree in a saucepan and begin to cook with constant stirring over low heat. Cooking time – 15 – 20 minutes. Add 600 grams of granulated sugar to the boiled berries. Do this in small portions so that the sugar dissolves faster and more evenly.
After the crystals have completely dispersed, the jam is cooked for another 5 - 7 minutes. The hot mass is placed in dry, sterile jars and the lids are screwed on tightly.
Method number 2
Place two kilograms of blueberries in a saucepan and begin to heat slowly. To make the berries soften faster and release juice, you can walk over them with a wooden or metal masher. Stir the mixture constantly so that it does not stick to the bottom of the bowl. After 15 minutes, the blueberries are transferred to a fine metal sieve and rubbed with a wooden pestle. The jam prepared in this way turns out to be very tender and homogeneous. After this procedure, sugar is added to the puree in small portions. The amount of sweetener is 1.5 kilograms. When the grains are completely dissolved, the jam is poured into clean jars. It is best to take small containers of 300 - 500 milliliters. This will protect the opened workpiece from sugaring.
