You will need the following products:

• zucchini - one and a half kg;

• bell pepper (sweet) and onion - 6 pcs.;

• tomatoes (red) - 1 kg;

• vegetable oil - 2/3 cup;

• sugar - 2/3 cup;

• salt - 2 tbsp. l.;

• vinegar (9 percent) - half a glass.

How to make Uncle Bens from zucchini

The first thing you need to do is wash, peel and prepare all the vegetables: cut the peppers and zucchini into strips, the onion into half rings, and grind the tomatoes through a meat grinder. The size of the chopped vegetables can be seen in the photo above.

If the zucchini is young, then you don’t have to peel the skin off of them. It is soft and will not be felt in the finished salad.

The marinade for the salad is prepared very simply: mix vegetable oil, sugar, salt, and vinegar in a saucepan. Place in turn the following in the boiling marinade: zucchini, onion, bell pepper and tomato.

The interval between adding vegetables is 5 minutes.

After the vegetables are added, the salad needs to be boiled, stirring occasionally, for 10 minutes, and then closed.

Place the squash Ankle-bens into clean and sterilized jars and cork.

From the amount of ingredients indicated in the recipe, you end up with 6-7 half-liter jars of salad!

Instead of zucchini, this recipe can be used to cover pumpkin for the winter. The result is a slightly different taste, but no less tasty.
