Transparent pear jelly is not only a beautiful, but also a healthy sweet preparation for the winter. Since the fruits themselves are very sweet, the fruit jelly turns out to be quite sweet, with a minimal amount of sugar added to it. Which, again, is a plus! Both for the budget and for health.
How to make pear jelly for the winter at home.
Making jelly will require tasty and ripe pears. They need to be thoroughly peeled from the hard shell, then cut into thin slices and the seeds removed.
Place them in a saucepan and add water. The water should be 2-3 cm higher than the fruit.
Cook the pears over high enough heat until they become tender.
Throw the pulp onto a clean cloth, securing it above the basin in advance.
Wait until the pears give up all the juice and it accumulates in our container. This procedure may take several hours.
From the resulting juice, pour out only the upper transparent part. We don't need pulp. We can use it to make jam or bake pies.
Add fresh lemon juice and white sugar to the clear pear infusion. For a liter of filtered liquid sugar, take 3 glasses and juice from one lemon.
Cook the syrup over low heat until it begins to gel. This is checked in this way: pour a teaspoon of hot liquid onto a saucer and see if it begins to thicken as it cools. If yes, then the jelly is ready.
If desired, at the very end of cooking, you can add spices to your taste. It could be: rum, liqueur, vanilla, mint concentrate.
Now, pear jelly can be sealed in hot jars.
Homemade clear pear jelly will keep well for several years if it is properly cooked and stored in a cool, dark place.
