In addition, thick tomato juice with spices simply cannot be replaced when cooking many dishes. Therefore, I propose, using my recipe with step-by-step photos taken, to start preparing this delicious and healthy preparation.
So, we need:
tomatoes - 8-9 kg, salt, sugar, cloves, black peppercorns, allspice peas, bay leaf.
I should immediately note that the amount of spices in the recipe is taken per 1 liter of freshly squeezed juice. I’ll write about their number a little later.
How to make tomato juice with pulp for the winter
When starting to cook, wash the tomatoes well and cut them into several pieces.
We cut out damaged areas, if any.
We prepare the juicer for work and pass the tomatoes through it. In the photo you can see what kind of design I came up with. 😉
If you don’t have one, you can grind the tomatoes through a meat grinder and rub the resulting mass through a sieve.
I got 7 liters of pure juice. You may get a little more or a little less. It all depends on the variety of tomato. The meatier they are, the more delicious thick tomato drink you will get.
Place the pan with the juice on the stove and add spices.
For 7 liters of the resulting juice I put:
bay leaf – 3 pcs.;
black pepper - 10-12 pcs.;
allspice peas - 3 pcs.;
cloves - 4 pcs.;
salt - 3 tsp;
sugar - 2 tsp.
Cook the juice with spices for 15-20 minutes from the moment it boils.
Don't forget to skim off the foam that collects during cooking. Pour boiling juice into prepared sterilized jars, cover with boiled lids. Let's roll up. Turn the jars with thick tomato juice over and cover with a warm blanket until they cool completely.
From the specified initial quantity of tomatoes, I got 6 liters of delicious spicy tomato juice. The photo this time didn’t turn out very “appetizing”, the camera let us down, but take my word for it that the juice is very tasty.
Prepared in this way, it is perfectly stored both in the pantry and in the cellar, and for some of my friends it is well preserved under the bed. 😉 We make healthy preparations for the winter quickly and with pleasure!
