If you managed to harvest a large harvest of strawberries or purchase this “miracle” at the market, then you should definitely try to preserve them for the winter so as not to lose vitamins and nutrients. My solution to the problem is puree. This preparation is done very quickly, and the result exceeds all expectations.

Preparing the berries

In any case, the strawberries need to be washed and sorted.

You need to wash the strawberries very carefully. To do this, place the unpeeled berries in a large container with cool water. Then mix the mass so that the sand and dust can be completely separated from the berries. There is no need to rub the strawberries with your hands, much less with a sponge.

When sorting, from the total mass, without a twinge of conscience, we remove damaged and dented specimens. Strawberry puree should be made only from selected berries. This is especially important if the dish is prepared for young children.

Remove clean fruits to a sieve using a slotted spoon or your hands, trying not to damage the product. Then we clean and sort the strawberries.

Strawberry puree for the winter in jars

An excellent preparation that preserves the natural taste and color of the product. To prepare it you only need strawberries and sugar. The ratio of products is taken 1:1.

Cover the berries with sugar and allow time for a fairly large amount of juice to release. 3-4 hours is enough for this procedure.

Punch the strawberries with a blender or pass through a meat grinder. A blender, in the first case, allows you to achieve a more homogeneous mass.

Place the container with strawberry puree on the stove and heat until the sugar grains are completely dissolved. If you plan to store the puree for up to 3 months, then the mass does not need to be boiled. If you plan for longer storage, then the puree should be kept on the fire after boiling for a couple of minutes.

Place the finished strawberry puree into sterile jars and screw the lids on tightly.

The technology for preparing puree for freezing is extremely simple. Ingredients: sugar, strawberries. Additional equipment – ​​blender, food processor or meat grinder.

Place the prepared strawberries in the chopper bowl and add sugar. The amount of sand is not specifically specified, since everyone’s taste preferences are different. Let us note only one thing: the less sugar, the healthier the preparation.

We put the crushed puree into freezing molds (we'll talk about them in more detail below) and put them in the freezer.

Natural puree without sugar for babies

This recipe differs from the previous one only in that there is no sugar at all.This dish is excellent for baby food, so you need to be very careful when choosing raw materials. The ideal option is to harvest from your own summer cottage; as a last resort, from the local natural products market.

This puree cannot be stored for a long time, so it should be packaged in clean containers and stored in the cold.

  • Small silicone molds. Pour the berry mass into molds and place in the freezer for 12 hours. After this time, put the portioned pieces of puree into one container and put them back in the cold.
  • Plastic cups. Initially, we freeze the puree in open glasses. After the mass has hardened, the containers must be tightly packed with cellophane film.
  • Glass jars. Some people claim that glass containers in the freezer break, but this is not true. Obviously, the statements come from those housewives who have not encountered this method of storing frozen food.

Strawberry puree that is to be stored in jars should be kept in a cool place. Shelf life – from 3 months to six months.

Frozen briquettes can be stored in the freezer until the next strawberry harvest. The optimal storage temperature is -16… -18 ºС.
