Raspberry puree: how to prepare and store for the winter at home

How to make raspberry puree
Before preparing the puree, raspberries should not be washed, otherwise they will take on excess water and release juice. And this means a loss of taste and aroma, as well as a possible reduction in shelf life.
Place the raspberries in a blender bowl, add sugar and grind the berries thoroughly.
If you don't have a blender, you can use a spoon or potato masher. The main thing is to simply crush the berries.
The amount of sugar for making raspberry puree is arbitrary. It depends on the quality of the berries themselves and your taste. On average, this is approximately 250 grams of sugar per 1 kg of berries.
Grind the raspberries through a sieve to remove small seeds.
This is not necessary, but if you are making raspberry puree for children, it is better to get rid of the seeds. Raspberries are quite liquid, so grinding will not take much time and effort.
That's all, the puree is ready, all that remains is to choose the method in which you want to store the puree for the winter.
Freezing raspberry puree
If you have enough space in the freezer, this is the best way to preserve raspberry puree for the winter. When frozen, raspberries do not change color, taste or smell, which is very important. After defrosting, you will receive the same fresh puree.
Pour the raspberry puree into plastic boxes with lids, or into ice cube trays if you want to use the puree soon, and place the puree in the freezer.
Frozen puree cubes can be used for smoothies or tea.

Seal the puree into jars
You can store raspberry puree without a freezer, but this will require a little heat treatment.
Pour the grated raspberry puree into a saucepan, bring to a boil and boil for 5 minutes.
After this, pour the liquid puree into sterilized jars, close the lids and wrap them well with a blanket so that the jars cool as slowly as possible.
