Original cucumber puree for the winter: we freeze fresh cucumber preparations for soups, baby food and salads
It is not always possible to freeze cucumbers whole for the winter, and the desire to cook something from fresh cucumbers in winter cannot simply be ignored. After all, fresh cucumbers are tasty, healthy, and simply pleasant.
In winter, fresh cucumbers may be needed for baby feeding, for preparing some types of soups, and don’t forget about skin masks, for which cucumbers are simply necessary.
You can save cucumbers as a puree. It's quite simple and doesn't take up much space. To make our task extremely simple, let’s immediately decide what exactly we need cucumbers for and immediately make preparations for soups, baby food, or salads.
So, wash the cucumbers and peel them.
If you have a blender, puree them or grate them on a fine grater. For soup or salad, add a drop of vegetable oil, salt, lemon and a few sprigs of dill to the puree.
Beat the puree thoroughly again.
Place in a jar, smooth the surface with a spoon and pour a spoon or two of vegetable oil on top. You can store such puree not in the freezer, but simply in the refrigerator. Shelf life in the refrigerator is about 2 months if the jar is sterile and not opened. After opening, of course, you need to use it immediately.
For some purposes (for example, for baby food), you need pure cucumber puree, without additives.In this case, you don't need to add anything. Just put the puree into molds, you can use empty, clean yogurt jars and freeze.
