The composition of homemade sausage is simple:
fresh beef – 1 kg;
potatoes – 1 kg;
onions – 3 pcs.;
fat – 50 g;
allspice;
salt;
sausage casing or intestine.
How to make homemade beef sausage.
Place the washed, veined meat in a saucepan with water and simmer for 90 minutes over low heat. Cut the boiled meat into very small pieces, and then chop it into chunks with a sharp knife. You can, of course, grind it in a meat grinder with a large grid, but, according to many, this will greatly change the taste of the sausage and not for the better.
Next, prepare the potatoes. There are some subtleties here too. Place washed and peeled potatoes in boiling water for no more than 5 minutes without cutting them. Grind the hot potatoes in a meat grinder with a large wire rack, add fat, finely chopped onion, season with salt and allspice. Mix the resulting mass thoroughly.
The casing for homemade sausage, which is most often the intestines, should already be prepared by this point. Place the filling into the cleaned and washed intestines and tie them loosely.Boil the cooked beef sausage in boiling salted water for about half an hour.
Before use, boiled sausage is thoroughly fried in a frying pan, or baked in a well-heated oven. This “dietary” homemade sausage just perfectly complements porridge, stewed cabbage or our favorite mashed potatoes.
