Gogoshar pepper

For this salad, it is better to purchase the thickest-walled pepper. Basically, these are varieties with round fruits: kambi or gogoshar.

Take 2 kg of red or green peppers, you can have equal amounts of both. Cut the pepper into long thin slices, the width of which should be no more than one and a half centimeters.

To the pepper add 4 kg of chopped ripe thick tomatoes, 1 kg of onion chopped into half rings and 1 kg of chopped carrots.

All vegetables should be chopped into approximately equal pieces so that later they are evenly saturated with the marinade.

Place the vegetables in a wide bowl, in which it will be convenient to mix them.

Add salt and sugar to the mixture to taste, pour in a couple of tablespoons of vinegar and a little more vegetable oil.

If you have fresh parsley in the house, chop the greens and crush the salad with it.

Stir the salad with a large wooden spoon and leave for 1 hour to release the juices.

While the salad is steeping, prepare the jars and lids. They must be scalded with boiling water.

Place one bay leaf and a couple of allspice peas at the bottom of the container.

Pack the prepared vegetable salad into prepared jars and sterilize for at least 1 hour. This time is calculated for a ½ liter jar.

Roll up the salad preparations and leave to cool in the air.
