I started looking for the recipe for the most delicious zucchini salad for the winter after I returned from a planned and long-awaited trip. Traveling around Italy, seeing its sights and admiring the beauty of this wonderful country, I became a real fan of Italian cuisine.
What dish, besides pizza, do we associate with Italy? Of course, pasta or pasta. And important additions to pasta are sauces with tomatoes, mushrooms, spices, zucchini and other vegetables. When I arrived home, I tried making different sauces, trying to imitate Italian cuisine, but they were all a little different. Until a friend shared with me a simple recipe for preparing Uncle Benz zucchini. I realized that I had found what I was looking for! The recipe calls it salad, but I would call it zucchini sauce with vegetables.
To prepare it you will need:
Zucchini - 2 kg;
Onions - 10 pieces;
Sweet red bell pepper - 7 pieces;
Tomatoes - 10 pieces;
Tomato paste - 0.5 l;
Spring water - 0.5 l;
Sugar - 200 g;
Salt - 2 tablespoons;
Ground black pepper - 1 teaspoon;
Vinegar (9%) - 2 tablespoons.
How to prepare zucchini salad for the winter.
We take the best, largest, most selected and ripe vegetables indicated in the recipe for this preparation. We chop them not very finely.
Onions, tomatoes and peppers - into smaller cubes, zucchini - into larger cubes.
It is advisable to use whole zucchini, so they must be unripe.
In a large stainless steel saucepan, dilute water, tomato paste, salt, and sugar.
Boil, add onion, cook for 10 minutes. Then add the zucchini and cook for another 10 minutes. We repeat the same steps with peppers and tomatoes. Add vinegar and pepper.
Let it simmer for no more than 5 minutes and pour into jars, sterilize for 25 minutes.
Store Uncle Benz zucchini preparations, preferably in a cool place. From this amount of ingredients, approximately 9 half-liter jars of finished sauce are obtained. But I want to give a little advice - it’s better to cook 2-3 servings at once. 9 jars is negligible. Winter zucchini salad turns out so delicious that it literally disappears before your eyes.
