Canned vegetables in this salad preparation save almost 70% of vitamins and 80% of minerals compared to fresh ones. Particular attention should be paid to green beans. How to make a winter vegetable salad.
First, we wash and sort the tomatoes: we select small, dense ones - they will go into stock, and we prepare a filling from overripe, irregularly shaped and large fruits. Cut whole tomatoes in half or into quarters.
Now let’s wash and prepare the vegetables indicated in the recipe.
Remove seeds from sweet bell peppers and cut into pieces.
We also cut the eggplants into pieces and fill them with salt water for half an hour. To do this, add 3 tablespoons of salt to 1 liter of water. This should be done to remove the bitterness inherent in eggplants.
We sort out the young green beans, remove the ends, break them into pieces 2-4 cm long.
To further prepare the vegetable preparation, you need to keep the peppers and green beans in boiling water for 4-6 minutes, and then place them in cold water.
Vegetables are ready for harvesting.
Now, let's move on to preparing the filling.
Boil the tomatoes cut into pieces for about 10 minutes, and then rub through a colander. If you want to have a more delicate filling structure, then use a sieve for rubbing. Add salt to this mass, maybe some hot pepper, and boil.
Then add bean pods, sweet peppers, eggplants and cook over low heat for 20-30 minutes.
We prepare the jars and place them in layers: parsley, celery, tomatoes and filling with vegetables.
