The most delicious pickled tomatoes for the winter
The last tomatoes on the bushes are never large, but they are the most delicious, as if all the aroma of summer had gathered in them. Small fruits ripen, usually unevenly, but these autumn tomatoes are very tasty in marinade in small, usually liter, jars.
Time to bookmark: Autumn
Place the tomatoes in clean jars and only then calculate the amount of marinade. For 1 liter jar of the preparation you will need: salt (fine) - ¼ cup, granulated sugar - ¼ cup; 1 PC. bay leaf, 4 black peppercorns, 3-4 cloves; vinegar for pickling (9%) – 20 ml. Place a clove of garlic in each jar.
This time I pickled the tomatoes in half-liter jars, so I took exactly half as much in total.
How to prepare delicious pickled tomatoes for the winter
Wash the tomatoes, sort those with spots, remove the stems.
Place in a washed (no need to sterilize!) jar tightly enough, but without deforming the fruit.
Prepare the ingredients included in the marinade depending on the number of cans of tomatoes.
Boil water, pour boiling water over the tomatoes in the jars, cover with lids. Leave for 15 minutes.
Drain water into a large saucepan.
Place a clove of garlic in each jar.
If you like spicy tomatoes, you can add more garlic.
When the water drained from the cans begins to boil, you should put spices, sugar, salt in it, and add vinegar.
Boil the marinade for 10 minutes.
Pour the boiling marinade over the tomatoes in the jars.
Immediately roll up the lids. There is no need to turn over and wrap the jars.
The most delicious pickled tomatoes should be stored in a cold place for no more than six months. There is no point in leaving such a preparation for next year.
