Preparing the berries
First of all, rowan berries are removed from the clusters, selecting only ripe and undamaged fruits. This process will not take much time, since chokeberry is a fairly large berry and picks off the branches very well.

In a saucepan with cinnamon
Add 300 grams of chokeberry, 250 grams of granulated sugar and ground cinnamon to 2 liters of boiling water. One pinch will be enough. Cover the container tightly with a lid and cook over low heat for 15 minutes. The compote should also cool under the lid for 3-5 hours. During this time, it will infuse thoroughly, and the berries will release all their beneficial substances into the syrup. The finished drink is passed through a sieve and served.
In a slow cooker from frozen chokeberries
A multi-cooker will help you cope with chokeberry prepared for future use. Frozen berries (400 grams) are placed in a multicooker bowl. Add half a lemon and 350 grams of granulated sugar. Please note that this recipe is for a 5 liter multicooker bowl.
The contents of the bowl are filled with cold water to the top mark. This is approximately 3-4 centimeters from the edge. The lid of the unit is closed and the standard “Soup” mode is set. It usually involves cooking for 1 hour.
If you decide to save time and pour boiling water over the fruits, then the cooking time should be reduced to 20 minutes.
The compote is boiled with the lid closed. It is important! After the readiness signal, the lid is not opened, but the drink is left to brew. It is very convenient to prepare this dish in the evening, and enjoy this healthy drink only in the morning. Overnight, the rowan will give up all its vitamins, and the compote will acquire a bright, rich taste.
Compote in jars for the winter
Classic option without sterilization
In this article, we specifically do not provide recipes with additional sterilization of preparations, since it is much easier and faster to make chokeberry compotes for the winter using the double-pouring method.
So, first of all, three-liter jars are washed and sterilized over steam or another convenient method. Place chokeberry into prepared dry containers so that the jar is filled to half the volume.
While all the preparatory manipulations are being carried out, water (3 liters) is already boiling on the stove. Boiling water is poured into jars of chokeberry and covered with clean lids. It is very important to fill the jars to the very top. The remaining hot liquid is poured into the sink.
After 10 minutes, work with the workpiece continues. Using a special mesh lid, the water darkened by the berries is poured into the pan. Add 2.5 cups of sugar to it and boil again.
Boiling syrup is poured over the “rested” chokeberry a second time. Use sterile lids to cover jars of compote.
Advice: Do not screw on the caps immediately. It is best to start seaming 5 minutes after the last pour. During this time, air bubbles that entered the jar along with the boiling liquid will rise to the top and this will minimize the possibility of the lids breaking off.
Tightly twisted jars are turned upside down and insulated for a day. If the jars were closed with screw lids, then there is no need to turn them over.

With mint
To prepare 3 liters of a delicious drink you will need 3 cups of chokeberry, 2 sprigs of mint and 2 two-hundred-gram glasses of sugar. The greens are thoroughly washed and lightly dried. You can simply shake the leaves several times.
The washed berries and mint sprigs are placed in a three-liter jar that has been previously sterilized. Then the products are poured with boiling water, covered with a lid and left for a quarter of an hour.
The aromatic infusion is poured into a saucepan and brought to a boil again. Sugar is added directly to the jar before the last filling. The finished compote is twisted and insulated for 24 hours until completely cooled.
How to store chokeberry compote
A drink brewed in a saucepan or in a slow cooker is stored in the refrigerator for no more than 5 days. Jars of compote, sealed for the winter, are placed for storage in a cellar or basement, where the temperature does not exceed +10ºС.
