Watermelon syrup: preparing homemade watermelon honey - nardek
With the advent of kitchen aids, such as electric dryers, new ideas began to appear on how to turn ordinary, familiar products into something special. One of such discoveries for our housewives was watermelon. Marshmallows, chips, candied fruits - all this is extremely tasty, but the most valuable component of watermelon is the juice, and there is also a use for it - nardek syrup.
The secret of a good housewife is to leave as little waste as possible when preparing a dish. If for cooking watermelon marshmallows If you only need the pulp, you can make a syrup from the remaining juice, which tastes very similar to honey.
That’s what they call it – “nardek”, which means watermelon honey. After all, watermelon has its own aroma and taste very weakly expressed, it is neutral and this gives room for imagination.
You can flavor watermelon syrup with mint, lemon, thyme, vanilla and many other aromatic additives, but still, let's make the syrup first.
For 1 kg of watermelon pulp:
- 0.5 kg sugar;
- Lemon, mint, vanilla to taste.
Wash the watermelon, cut it and separate the pulp from the green rind. Remove the seeds and cut into smaller pieces, or immediately puree in a blender.
Place the pulp in a thick-bottomed saucepan, add sugar and place over low heat. There is no need to add water, the watermelon is already juicy enough.
After boiling, the juice will begin to change color and thicken. Stir the syrup and cook it, but no more than 30 minutes.
Now you need to separate the pulp, which will go into marshmallows, and drain the syrup. Strain it through a sieve and evaluate the thickness.
If the syrup seems too liquid, you should evaporate it a little more. After all, the thickness of the syrup depends on the amount of sugar, and if the watermelon is not very sweet, then take your time and cook the syrup as needed.
You can store watermelon syrup in small jars or bottles in the refrigerator. In this case, your syrup will last until next season without any problems.
