To do this you need a basin or a wide pan with a flat bottom. Fill up to half the volume of the pan with birch sap and place it on the fire.

This is a rather long process, since the initial sugar content in birch sap is only 3%, and you need to evaporate the water until the sugar concentration reaches 60-70%.

Foam will constantly appear on top, which must also be constantly removed with a slotted spoon so that the syrup remains clean and transparent.

The finished syrup takes on a color from light yellow to amber. It becomes viscous - like honey, and this means that the syrup is ready.

On average, to obtain one liter of syrup, you need about 100 liters of juice.

To boil such volumes of juice, the same small container is suitable. You will just need to gradually add juice to the syrup as it boils.

You can store birch syrup in glass containers. Sterilize the bottles, pour in hot syrup and use a seamer to close the lids.

This syrup, prepared without sugar, is very useful for adults and children. It is absolutely safe for teeth. According to dentists, birch syrup can even stop tooth decay, since it contains tannins and a whole range of vitamins.

Filter fresh birch sap through flannel cloth or several layers of gauze.

Pour the juice into a saucepan and bring to a boil.

Boil the juice for an hour, constantly removing the foam, then add sugar at the rate of 1 glass of sugar per 1 liter of juice.

Continue cooking the syrup until it reaches your desired consistency.
