There are many varieties of elderberry, but there are two main varieties: red elderberry and black elderberry. However, only black elderberry fruits are safe for culinary purposes. This plant also has healing properties. Syrups made from the fruits and flowers of black elderberry help fight colds and viral diseases, strengthen the digestive tract and fight “women’s” diseases.

However, syrup is used not only as a medicinal drug. This dessert dish goes well with pancakes, pancakes, ice cream and cottage cheese casseroles. Excellent soft drinks are also prepared from syrup by adding it to ordinary or mineral water.

Recipe with lemon zest and juice

To prepare the syrup you will need 30 fragrant black elderberry inflorescences. The twigs are rinsed in water to get rid of any insects remaining in the flowers.Then they are disassembled into smaller inflorescences for ease of cooking. The main stem is discarded.

Sugar syrup is prepared in a saucepan. To do this, mix 2 liters of water and 2 kilograms of sugar. After the crystals dissolve, add the zest and juice of 2 large lemons to the syrup. The mass is boiled and then removed from the heat. Elder flowers are placed in hot syrup, covered with a flat plate and pressed with a weight. It is important that the inflorescences are completely immersed in the syrup. In this form, leave the bowl at room temperature until completely cooled. Afterwards, it is put in the refrigerator for a day. After the specified time, the bowl is taken out, the syrup and flowers are mixed, and again sent to the cold. The procedure is repeated 3 times. After the syrup has infused as much as possible on the flowers, it is filtered. This is done through several layers of gauze.

Quick recipe with citric acid

Elderberry inflorescences (25 pieces) are washed and dried on paper towels. Prepare syrup by mixing sugar and water. Inflorescences are placed into the boiling liquid and the fire is immediately turned off. The flowers are infused under the lid until the liquid cools completely (3 – 4 hours). After this, the elderberries are thrown into a sieve, and the syrup is put on fire and brought to a boil. As soon as the liquid boils, the buds are again placed in the sugar solution. The mass is cooled again under the lid. The syrup, at room temperature, is filtered for the last time and bottled. Of course, this method of making syrup cannot be called super fast, but, in any case, it does not take three days, as in the previous case.

No added water

For this recipe you only need sugar and berries. Products are taken in equal proportions.Place the elderberries in a 1-2 centimeter layer in a wide-bottomed bowl. They are covered with granulated sugar on top. Layers are alternated until the products run out. Cover the bowl with a lid and place in the refrigerator. After 2 - 3 days, the sugar completely dissolves, and a large amount of juice is released from the berries. The mass is thrown into a colander, but not squeezed out. The syrup is poured into a bottle, and the berries are dried and later brewed into tea.

A pound of black elderberries is boiled for 15 minutes in 500 milliliters of clean water. The resulting juice is drained, filtered through a sieve, and a glass of sugar is added to it. Boil the mass for 3 minutes and turn off the heat.

With lemon juice

1 kilogram of sorted black elderberry berries is placed in a container with a wide bottom. Place the bowl on low heat and heat for 15 minutes. During this time, the berries will burst and a large amount of juice will be released. The juice is drained through a sieve without squeezing out the pulp of the berries. Add 1 kilogram of sugar and the juice of 1 lemon to it. All products are boiled for 1 minute and packaged in sterile jars.

With ginger and cinnamon

A glass of elderberry is sorted and washed. Pour the same volume of cold water over the berries, add a tablespoon of grated ginger root and half a teaspoon of ground cinnamon. Boil the elderberry with spices for 10 minutes, then cool naturally and pass through a sieve. Add 150 grams of sugar to the cooled juice and dissolve it, heating the mass again. Hot elderberry syrup is poured into sterile containers and screwed on with lids.

Dried black elderberry syrup

A glass of dried berries is poured with 2 glasses of boiling water. Place the bowl on the fire and boil for 20 minutes.After this, the elderberry is infused under the lid for 6 hours. The broth is poured through the grate. The strained mass is mixed with half a glass of granulated sugar and boiled until the crystals dissolve.
