Violet syrup - how to prepare the “dish of kings” at home

Sometimes, reading French novels, we see references to the exquisite delicacy of kings - violet syrup. You immediately imagine something delicate and magical with extraordinary color and taste. You can’t help but wonder – is this really edible?

Not only is it possible, but it is also necessary. Even though we are not kings, no less fragrant violets grow in our forests, so why not treat yourself to a royal dish? Moreover, “Flower Cooking” is rich in surprises and unexpected finds, and you can always find a use for violet syrup.

Which violets can be eaten?

Indoor - absolutely not allowed. Also, do not buy fragrant bouquets in flower shops. If these violets were grown in greenhouses specifically for bouquets, they were probably treated with pesticides. If you can’t get out into the forest yourself, look for grandmothers near the metro who sell these lovely flowers.

How to make violet syrup

So, you have several bouquets from which you can make syrup. Rinse the bouquets, shake off the water and remove the flowers from the stems.

Here you need to be especially careful. After all, the green sepals give their own taste, and this is the taste of ordinary grass.

For 1 glass of water you need:

  • One handful of violet flowers;
  • 200 gr. Sahara;
  • Lemon or vanilla can be added, but do not overdo it, otherwise you will interrupt the taste and aroma of violet.

In the classic version, the syrup is prepared as follows:

Place the flowers in a clay mortar and rub the petals thoroughly with a wooden pestle. Cover the violet paste with a cloth and let it sit until the morning.

The next day, cook syrup from water and sugar and pour boiling syrup over the petals.

Cover again with a cloth and leave until the syrup has cooled completely and the petals have discolored.

Strain the syrup through a strainer and pour it into the bottle.

As practice shows, it is not necessary to chop the petals, and a wonderful syrup is obtained without it. Therefore, I will present you with another recipe, a more modern one. It's faster and simpler.

Place the prepared flowers in a glass jar and pour boiling water over them.

Cover the jar with a thick cloth and let it sit until it cools completely.

Then, pour the water in which the violets were standing into a saucepan, add sugar and cook like regular syrup - until the sugar is completely dissolved and the desired thickness.

You can “play” with the color of the syrup, try it, experiment in different bottles. Violet syrup changes color depending on the amount of lemon juice you add to it.

But if you want a violet color, then of course it’s better not to add anything and leave it as is.

What can violet syrup be used for?

It can be added to any dessert. But violet does not like competition, so if you decorate a dessert with violet, then other fruits and syrups will be superfluous.
