Homemade lavender syrup: how to make your own fragrant lavender syrup for the winter
Few people know that lavender is used in cooking in the form of syrup. Of course, not everyone likes this aroma, because it resembles perfume, but nevertheless, a drop of lavender syrup in the tea will not hurt. Lavender syrup is poured over ice cream, added to cream or glaze. In fact, you can sing odes to lavender endlessly, but we will limit ourselves to just the recipe for making lavender syrup.
You can make syrup from dried lavender flowers or fresh ones. This will not affect the quality of the syrup in any way. It is only necessary to note that lavender syrup will be blue or purple as in the pictures only if you take care of this in advance and buy the necessary dye. Lavender flowers have very little of their own coloring pigment, and the maximum will be a pale yellow color and mainly from sugar.
So, pour 1 liter of water into a pan, add 0.5 kg of sugar to it and put the pan on the fire.
When the sugar is completely dissolved, add 7-8 tablespoons of dry or fresh lavender flowers to the syrup.
Turn the heat down and simmer the lavender for 5-10 minutes.
Cover the pan with a lid and remove it from the heat. Lavender should sit for at least an hour.
Strain the syrup through a sieve and return the pan to the heat. Now you can boil the syrup to the desired thickness and add food coloring.
Pour the hot syrup into bottles and store it in a dark, cool place.Syrup in sealed bottles can be stored for more than 2 years without loss of quality.
