Cloudberry syrup recipes
Method number 1 - without cooking
1.5 kilograms of ripe berries are crushed with a wooden masher, and then the mass is ground through a fine metal sieve. The juice, deep orange in color, is mixed with 1 kilogram of sugar. In order for the crystals to dissolve better, the mass is heated to 60 - 70 degrees over a fire. The finished syrup is poured into bottles and sealed with a lid. This syrup contains the maximum amount of vitamins.
Method No. 2 – syrup boiled over fire
For 1 kilogram of berries you will need 1 kilogram of granulated sugar and 1 liter of clean water. All products are mixed and put on fire. The mixture should boil on medium burner power for 15 - 20 minutes. The juice is then passed through cheesecloth. To achieve the most transparent color of cloudberry syrup, the mass can be strained several times.
Cloudberry sepal syrup
Sepals with stalks (200 grams) are poured with a liter of cold water and put on fire. As soon as the mass boils, turn off the fire. Cover the bowl with a lid and wrap it in a warm towel. The mixture should sit for approximately 10 hours. After the set time, the broth is poured through a sieve, 1 kilogram of sugar is added to it and put on fire. Cloudberry syrup is boiled for 15 minutes and then poured into jars.
Cloudberry leaf syrup is an excellent cough remedy
Making sweet cough medicine is not at all difficult. For this you will only need freshly cut cloudberry leaves (50 pieces). The grass is poured with 700 milliliters of boiling water. Place the mixture on the fire and wait until the water boils. The fire is immediately turned off, and the bowl is tightly closed with a lid. Leaves should be infused for at least 6 hours. After this, the foliage is removed from the cooled infusion. Add 500 grams of sugar to the liquid and boil the mass until thickened for a quarter of an hour.
How to store prepared syrup
Cloudberry syrup keeps well. Sealed, sterile jars of syrup can not lose their valuable qualities for up to six months. Bottles are kept in a cool, dark place. Opened jars are stored in the refrigerator for 2 - 3 weeks. Cloudberry preserves its medicinal properties perfectly in canned form, so syrup from it should always be kept on hand.
