It’s hard to imagine a winter table without pickled stuffed peppers that taste good and have unique beneficial properties. The mere appearance of this vegetable beckons and whets the appetite, and when combined with cabbage, they simply have no equal. In our family, homemade preparations from this vegetable are held in high esteem! Especially this recipe - when peppers stuffed with cabbage and herbs are covered in marinade... I hasten to assure that even the most inexperienced housewife can cope with preparing this miracle, and it will not take much effort and time.
How to cook stuffed peppers.
Before starting the main part of the action, clean the red and green peppers from the “tails” and seeds, wash them, salt them from the inside and place them on the table with the holes facing down. Let them stand like that overnight.
Cut the carrots, celery, cabbage, parsley root in advance and add salt.
The next day, we begin stuffing the peppers with a fragrant, vitamin-rich mixture of vegetables.
Close the hole of the filled peppers on top with slices of carrots and wrap them in celery leaves.
Place with the holes facing up into clean jars.
Cover everything with currant and/or cherry leaves.
Pour in the prepared, hot marinade.
It’s easy to prepare a delicious marinade for peppers with vegetables: for 6 liters of water, take 2 liters of vinegar, 500 g of salt, a little bay leaf and black peppercorns.
Keep the pepper preparations in your room or kitchen for the first couple of days. The first days - shake the jars. And finally, cover them with cellophane soaked in alcohol or vodka. Store finished products in the cold.
