Cherry juice for the winter - a simple recipe without pasteurization

Some may say that you can’t make juice from cherries, but you can argue with that. Cherry juice is no more difficult to prepare than cherry. Although, with this juice, not everything is so simple. For some reason, many housewives make life difficult for themselves by cleaning the seeds before preparing the juice. It's long, dirty and boring. Forget about seeds and try a simple recipe for making cherry juice.

There are many varieties of cherries, and of course, it is better to choose a variety with juicier berries. Wash the cherries and let them drain.

Pour the cherries into the pan and simply crush all the berries with your hands. I assure you, it is much easier than cleaning the pits. You can use a blender, wooden masher, or mixer to mash the cherries.

After you have turned the cherries into porridge, let this porridge stand for an hour and a half. Cherry pits add a piquant aroma to the juice, and this is not at all unnecessary.

Place a sieve on the pan and strain the juice, grinding the pulp.

Of course, you won’t grind everything, but you shouldn’t lose so many cherries. Place the pulp in a separate saucepan. After you have strained all the juice, pour cold water over the pulp and mix it thoroughly again with your hands.Strain the resulting liquid and pour it into the clean juice.

Each housewife chooses her own proportions. On average, 1 liter of juice requires no more than 0.3 liters of water and 200 grams of sugar. But this depends on the juiciness and taste of the berries themselves.

Prepare the jars. Wash them, sterilize and heat them in the oven.

Now, add sugar to the cherry juice and place it on the stove.

Bring the juice to a boil and skim off the foam with a slotted spoon. Let the juice boil for 5 minutes and pour it into jars. Pour the juice all the way to the top until it almost overflows. Immediately cover it with lids and roll it up. Turn the jars upside down and wrap them until they cool completely.

The taste of cherry juice is very delicate and soft, and if you want to diversify it, add spices. Sweet cherries love cinnamon, vanilla and lemon.
