Grapefruit juice: how to prepare and store for the winter
Grapefruit has a lot of fans who love that bitterness that makes most people cringe. This is just tannin, which is contained in grapefruit fruits, and it is grapefruit juice that is considered one of the most useful, but also the most dangerous. To make grapefruit juice, you only need grapefruits, sugar and water.
From 1 kg of grapefruits you get approximately 0.5 liters of pure juice.
Wash the grapefruit, pat dry and cut in half. Using a citrus squeezer, extract the juice.
This juice is very rich and bitter, and if you want to soften the taste and have time, you can fix it.
Peel the grapefruit and remove membranes with partitions. They contain the main part of tannin, which gives bitterness. Without these films, grapefruit juice will be much softer and more pleasant.

Using a press, squeeze the juice out of the peeled slices and you can start storing it for the winter.
For 1 liter of pure juice:
- 5 liters of water;
- 250 grams of sugar.
Pour water into the pan, add sugar and cook the syrup.When the sugar is completely dissolved, remove the pan from the heat and cool it slightly. Pour grapefruit juice into the syrup and stir.
The difficulty is that grapefruit juice cannot be boiled, otherwise all the vitamins will be destroyed.
Pour the juice into bottles, place them in a saucepan and cover with lids. Fill the bottles with water until it just barely reaches the neck of the bottle and place the pan with the bottles on the stove. Grapefruit juice should be pasteurized for the winter for at least an hour if these are half-liter bottles and an hour and a half if they are liter bottles.
Grapefruit juice should be stored in a cool, dark place for no more than 6 months.
