Zucchini juice for the winter - the king of vegetable juices

Such familiar zucchini can bring surprises. There is probably no person in the world who has not tried squash caviar at least once. Many housewives cook “zucchini like pineapples,” and this suggests that there is a lot we don’t know about zucchini. In particular, about the fact that you can make juice from zucchini for the winter.

Young zucchini consists of 95% water, which means they can be used to make a healthy drink for the winter. Of course, zucchini itself is not very tasty, but it is so healthy that it’s worth racking your brains and thinking about how to make zucchini juice tasty. There are fasting zucchini diets, however, you shouldn’t get too carried away with it. The daily dose of zucchini juice should be no more than one glass, otherwise you may get an upset stomach.

To make tasteless zucchini pleasant, it is better to take berries and fruits that have a sour taste and a stronger and more pleasant aroma as “partners” for zucchini. Seasonal fruits can be apples or cherries. If nothing is ripe yet, you can add oranges or lemons to the squash juice.

Zucchini comes in different varieties, sizes and colors, but this is not important for juicing. The main selection criterion is the degree of maturity of the zucchini. Young zucchini, or even slightly unripe ones, are juicier and more healthy. The pulp of old zucchini is more like a sponge and you will have more waste than juice.

Wash the zucchini, trim the tail, and cut into small pieces.If the zucchini is very young, you don’t have to peel the peel.

Squeeze the juice out of the zucchini using a juicer. This is the most convenient way, and the losses in this case are minimal.

From 1 kg of young zucchini, approximately 900 ml of juice is obtained. For this amount of zucchini juice you can add:

  • juice of 1 lemon/orange;
  • 100 g sugar;
  • vanilla to taste/optional.

Drain the zucchini juice into a saucepan, add lemon juice and sugar. Boil the juice for 5-7 minutes over low heat.

Zucchini juice should be rolled up like regular juices. Pour the hot juice into heated sterile jars and seal them with lids. Cover the jars with a blanket to slow down cooling, which replaces pasteurization.

Storing zucchini juice is not difficult. It, like your other products, will last up to 12 months in a room where the temperature is not higher than +18 degrees, without sudden changes.
