Nectarine juice with pulp for the winter

A nectarine differs from a peach not only by its bare skin, but also by its large amount of sugar and vitamins. For example, there is almost twice as much vitamin A in nectarine as in a regular peach. But that's where the differences end. You can make puree from nectarine, make jam, make candied fruits and make juice, which is what we will do now.

Usually, juice with pulp is prepared from nectarines. It is healthier than clarified juice, and clarifying nectarine juice at home is very problematic.

To prepare nectarine juice for the winter, you will need:

  • 1 kg of ripe nectarines;
  • 0.5 liters of water (approximately);
  • 100 grams of sugar;
  • Citric acid on the tip of a knife.

Boil water in a saucepan and, one by one, place the nectarines in the boiling water for 1-2 minutes, and immediately transfer them to cold water. This is necessary in order to remove the skin from the nectarine. Although it is thin and smooth, there is no need for pieces of peel in the juice.

Peel the skin and remove the seeds.

Place the peeled nectarines in a saucepan and fill them with water so that the water barely covers the fruit.

Place the pan on the stove and simmer the nectarines over low heat until they are softened enough.

Using a blender or wooden masher, mash the nectarines until smooth. Add sugar, citric acid and add water to the desired consistency. After all, we need juice, not puree?

Place the saucepan with the juice back on the stove and bring the juice to a boil.After boiling, cook the juice for another 3-5 minutes, and you can pour it into sterilized jars with lids.

Nectarine juice is not too difficult to store, but it is still better to store it in a cool and dark place. Then it will definitely last until next summer.
