Rosehip juice - how to preserve vitamins for the winter
Many people know that rose hips are very healthy and there is no fruit in the world that can compare with rose hips in the amount of vitamin C per 100 grams of product. We will talk about preparing healthy rosehip juice for the winter in this article.
Rose hips are often dried for the winter, and then decoctions are prepared from it. Of course, this is also useful, but no decoction can compare with fresh rosehip juice. To preserve all the vitamins and beneficial elements, you need to prepare juice from fresh rose hips.
For these purposes, it is better to take cultivated varieties. They are much larger and this makes cleaning easier, but the composition of vitamins is almost identical.
Let's look at two ways to prepare rosehip juice. They differ in the way they are prepared and stored, and you can try both methods to find the best one for you.
Rosehip juice without sugar
- 1 kg of rose hips;
- 1 glass of water;
- citric acid 5 gr.
Wash the rose hips. Remove the stem and receptacle and cut the fruit in half.
It is not necessary to remove the seeds. Heat water in a thick-bottomed saucepan, add the peeled rose hips and bring them to a boil and turn off the stove.
Now you need to cover the pan, you can even wrap it up so that the broth brews. On average, this takes 3-4 hours, after which you need to drain the juice through a large-mesh colander and strain through cheesecloth a second time.In the very core of the rosehip there is such a cute fluff, but it is only cute in appearance. In some it causes a severe allergic reaction and it is better to be safe.
Pour the resulting juice into a saucepan, add citric acid and bring to a boil.
There is no need to boil rosehip juice, just 2-3 minutes of boiling is enough, and you can pour it into jars with lids.
Even though we prepared the juice with water according to this recipe, it still turns out to be too concentrated and cannot be drunk in its pure form. Dilute it with water or other juice in a 1:1 ratio, and then you will not have an overdose of vitamins.
Since this juice is sugar-free and virtually preservative-free, store it in a cool place for up to 10 months. You can increase the shelf life if you cook rosehip syrup.
Rosehip juice with sugar
Traditional healers do not recommend using sugar and advise replacing it with honey, but in this case, it is sugar that is needed. This method is similar to recipe for rosehip jam, but here we only take juice.
Wash the rose hips, remove the receptacle and tail, cut and completely remove the seeds and fluff.
Place the fruits in a saucepan and pour boiling water for 3-5 minutes, after which the water must be drained.
In a clean liter jar, pour a couple of tablespoons of sugar into the bottom, then place a layer of rose hips. Sprinkle it with sugar and add rose hips again. Compact the layers and stack them until you reach the top. Seal the jar with a plastic lid and place the jar in the refrigerator.
After 5-7 days you will see that the sugar has melted and the jar is filled with juice. Pour the juice into a bottle and also store this juice in the refrigerator.
With this method, the juice is stored for no more than a month, but if you freeze it, it will delight you all winter.
