Strawberry juice for the winter - preparation and storage methods
Strawberry juice is rarely prepared for the winter, and not only because there are never too many strawberries. Strawberry juice is very concentrated, and you should not drink a lot of it. Strawberries, like strawberries, can cause severe allergies, and this is very unpleasant.
But this is not a reason to refuse to make strawberry juice.
Sort through the strawberries and discard the green ones. They will only give acid, but they still have no aroma.
Wash the berries and puree them with a blender or wooden masher. Heat the strawberries on the stove to help the juice separate, but do not bring to a boil. Place the strawberry pulp in a fine-mesh sieve and grind the berries.
You will get a fairly thick and flavorful puree. Add sugar to the water and stir the juice well.
- For 1 kg of strawberries;
- 100 gr. boiled water;
- 100 gr. Sahara.
Further, the preparation of juice depends on the method of its storage. Strawberry juice can be frozen by pouring it into ice cube trays. In this case, there is no need to boil it, just warm the juice a little so that the sugar melts. Use the recipe freezing fresh strawberries, if you have enough space in your freezer for this.
In any case, you should not boil strawberry juice; it is better to use the pasteurization method. Pour the juice into wide-necked glass bottles and place them in a saucepan. Pour water into the pan and cover the bottles with lids. Pasteurize strawberry juice depending on the volume of bottles.Half-liter 1 hour, liter 1.5 hours.
With this method of preparing juice, it can be stored in a cool, dark place for up to 8 months, along with strawberry compote.
