Salted mushrooms with cloves and cinnamon
In the North Caucasus there is no such abundance of mushrooms as in central Russia. We do not have noble whites, boletus mushrooms and other kings of the mushroom kingdom. There are a lot of honey mushrooms here. These are the ones we fry, dry and freeze for the winter.

I got this simple recipe for making salted mushrooms at home from my mother. The taste of the prepared mushrooms is rich and even simple salted mushrooms turn into a royal dish.
How to pickle honey mushrooms for the winter
First of all, the collected honey mushrooms must be sorted, washed and boiled in boiling water for 30-40 minutes, collecting the foam with a slotted spoon. When the mushrooms are cooked, they must be strained, rinsed with cold water and left to cool.
While the mushrooms are cooking, let's prepare the brine.
For 1 liter of water we put:
- 3 teaspoons 9% vinegar;
- 2 tablespoons sugar;
- 2 tablespoons of salt;
- 3 bay leaves;
- 3 cloves (sold in packages or loose at a spice store);
- 6 black peppercorns;
- 0.5 teaspoon ground cinnamon.
Place everything listed above in a saucepan with water, boil and cool.
To pickle this homemade recipe, you also need to prepare fresh garlic. For one liter jar of mushrooms you need about 4-5 cloves.
While the mushrooms and brine are cooling, you should wash and boil the liter jars.I do this in the microwave, pour 2-3 cm of water on the bottom and put them in the oven, turned on at full power for about 6 minutes. I simply pour boiling water over the plastic lids.
Let's move on to the last stage of preparing our salted mushrooms with cloves and cinnamon. Place the mushrooms in a clean liter jar, filling about 2/3 of the capacity.
Add 4-5 cloves of garlic to each jar.
Fill it all with cold brine.
Mix thoroughly, cover with a plastic lid and put in the basement/on a cold balcony.
During salting, foam or a white sediment may appear on the top of the jar - this should be removed with a slotted spoon. It is also possible that the amount of liquid in the jar may decrease over time. In this case, it is necessary to add the required amount of brine so that the mushrooms are completely covered. Therefore, as you can see in the photo, I also close the finished brine in a jar.
Salted honey mushrooms are a very tasty preparation for the winter. It will be ready for use in about a month. In winter, after opening a jar of homemade salted honey mushrooms, you should rinse them with cold water in a colander (they will be a little “snotty”), put them in a bowl, season with green or onions and refined oil.
