It's simple - the zest is in the brine.

How to prepare brine for tomatoes.

Take a bucket of water, 2 cups of sugar, half as much salt, a teaspoon of allspice and bitter pepper, 10-15 bay leaves, dry mustard - 100 g, black peppercorns. Let's warm it up a little.

Boil all the ingredients, but without mustard.

When the liquid has cooled, add mustard and stir. The brine has become yellowish and transparent - it is ready.

How to pickle tomatoes.

We take not a small container. It could be a bucket, a large pan or a barrel.

According to tradition, we place leaves down at the bottom. On top is a layer of tomatoes. You don’t have to line each row with spices, just add them periodically to the tomatoes when laying them.

Fill the container - fill it with brine. And then we do it the way our grandmothers did - put a rag on top of the tomatoes and press them down.
