Salted tomatoes in sugar for the winter - an unusual recipe for salting tomatoes with sugar in a jar or barrel.
It is best to lay salted tomatoes in sugar for the winter at the end of the harvesting season, when there are still ripe red tomatoes, and those that are still green will no longer ripen. Traditional pickling usually only uses salt, but our homemade recipe is not quite ordinary. Our original recipe uses mostly sugar to prepare tomatoes. Tomatoes in sugar turn out firm, tasty, and the unusual taste not only does not spoil them, but also gives them additional zest and charm.
And so for our unusual tomato preparation recipe you will need:
— Tomatoes 10 kg;
— Tomato puree – 4 kg;
— Sugar – 3 kg;
— Currant leaves – 200 gr.;
- Cinnamon (you can also add cloves if you like) - 5 g;
— Black peppercorns – 10 gr.;
- Salt - 3 tablespoons.
How to salt tomatoes with sugar.
The bottom of a barrel, jar or other suitable container for pickling should be lined with a currant leaf and sprinkled with spices: allspice, cinnamon and cloves.
We wash and sort by size tomatoes that are not fully ripe, green or brown.
At the bottom of the barrel, sprinkled with spices, we will place the first layer of tomatoes, which we will cover with sugar.
So you need to place the tomatoes in a container, sprinkling each layer with granulated sugar.
We fill the container for canning tomatoes so that there is still 20 cm free at the top.
Then we grind the well-ripened red tomatoes in a meat grinder directly with the grains.
To the resulting tomato puree you need to add the remaining sugar and salt and pour it over the preparation with tomatoes.
This is a delicious and unusual homemade recipe for pickling green tomatoes with sugar in tomato juice. In winter, such homemade preparation will complement your main courses, and from the tomato sauce in which the tomatoes were “salted” you can prepare sauces for meat, pizza or dressings for first courses.
