“Sunny” pumpkin jelly for the winter
As a child, I hated pumpkin dishes with a passion. I didn't like its smell and taste. And no matter how hard the grandmothers tried, they could not feed me such a healthy pumpkin. Everything changed when they made jelly from the sun.
Cunning grandmothers figured out how to make healthy pumpkin into a delicious dessert. Much has changed since then, but the benefits of pumpkin for baby food are still beyond doubt. Now, having already become a mother, you have to be cunning and invent with your children, and if your children have the same harmful whims, write down the recipe for pumpkin jelly for the winter, you will certainly need it.
- 1 kg pumpkin;
- 0.7 kg sugar;
- 30 gr. gelatin;
- 1 lemon;
- 100 gr. dried apricots or raisins.
It is better to choose a bright pumpkin, because children love bright and rich colors. They will try it, if only out of curiosity.
Peel the pumpkin, cut into small pieces and boil until soft.
Pour the water into a bowl and dissolve the gelatin in it.
Grind the pumpkin with a blender or potato masher. It's like cooking pumpkin puree, for baby food.
Now, mix pumpkin puree with sugar, lemon juice and finely chopped dried apricots or raisins.
You can do without this, but dried apricots and raisins go very well with pumpkin. Stir until the sugar begins to melt and pour the diluted gelatin into the puree.
Now, you cannot boil the future jelly, you can only heat it, because gelatin does not tolerate cooking.
Heat the puree on the stove and stir until the sugar is completely dissolved.
Taste it, maybe add some vanilla or lemon zest?
Pour the hot jelly into jars, close them, and pour a little into the bowls to try now. The jars can be immediately placed in the kitchen cabinet, and the bowls with pumpkin jelly can be placed in the refrigerator.
