We start preparing the jam by thoroughly washing the gooseberries and clearing them of seeds.

I make jam from:

- 400 grams of gooseberries,

- 800 grams of sugar,

- 1.5 glasses of water,

- juice of two lemons.

How to make gooseberry jam with lemon juice.

Boil water and pour it over the berries. Those that will float must be lowered back with a spoon.

When the berries acquire a whitish tint, they must be placed on a sieve and doused with very cold water with the addition of small ice cubes.

After this procedure, put the gooseberries in a bowl, fill them with water and ice and put them in a cold cellar or refrigerator for about 48 hours. Then put it on a sieve again to drain off excess liquid.

Meanwhile, take 400 grams of sugar and prepare syrup. Pour berries into it. When the mixture boils, remove the jam from the heat.

Then sprinkle another 100 grams on top. sugar, bring to a boil again and remove from heat. Repeat the procedure until the sugar runs out.

At the last stage, add lemon juice to the jam along with granulated sugar. Cook for some more time, remembering to skim off the foam. Stir the jam with a spoon forbidden!
