There are various ways to prepare hot pepper for future use. One of the simplest and easiest ways in which all the vitamins are preserved and the pungency is not lost is drying. You can, of course, use a modern dryer for vegetables and fruits, but why not try to do it according to the old proven recipe of our grandmothers?

We select even, undamaged hot pepper pods, wash them, blot them with a linen napkin and place them on a board. After three or four days, we make “beads” - we tie all the peppers by their tails, leaving some distance between them for better air access. The room in which the process will take place must be sunny and “drafty.”

Hot red pepper prepared according to this recipe is used to prepare various dishes. If necessary, it can be ground into powder using a mill.
