Royal gooseberry jam with nuts - a simple recipe
Ruby or emerald gooseberries in a transparent syrup, viscous with sweetness, carry a secret - a walnut. An even bigger secret and surprise for eaters is that not all berries are walnuts, but only some.
This gives tea drinking some excitement, a game of “lucky or unlucky.” 😉 This kind of gooseberry jam with nuts is called royal, but since not all berries have their own nut, it’s easier to prepare. I suggest you try my recipe with step-by-step photos.
Compound:
- gooseberries – 1 kg;
- sugar – 1.1 kg;
- walnut – 100-200 g;
- water – 0.5 tbsp.
How to make gooseberry jam with nuts
In order to prepare this jam, you should choose fairly hard gooseberries at the initial stage of ripeness.
Wash the gooseberries and cut off the tails and butts with scissors. Moreover, we cut off the lower part a little more in order to remove the hard seeds.
Then, through the cut hole with the tip of a knife, using a hairpin, we clean out the seeds. From every berry.
Of course, removing bones takes time, but this activity can be combined, for example, with watching a TV series.
We cut the nuts not large, but not small either.
Stuff as many gooseberries as you need.
The nut should fit easily inside the berry, otherwise it will leave it during cooking.By the way, there are always “saboteurs”. 😉
Place the pulp and seeds into a saucepan, add water and cook for 5 minutes. We wipe through a sieve.
Pour sugar into the resulting liquid and prepare the syrup over low heat. After boiling, drop the berries into it and stir gently. Bring to a boil and turn off the gas.
Do not cover with a lid, leave at room temperature.
After 8-12 hours, bring the cooking to a boil and turn it off again, leave for another 8 hours.
Boil for the 3rd time, cook for 5 minutes, put into sterile jars. Store in a cool place.
