Typically, caviar is prepared from zucchini, jam is made, and marinated in slices. Today we want to offer you an interesting option for preparing zucchini for the winter in the form of candied fruits.

Zucchini dessert can be consumed instead of store-bought sweets, added to porridge, or used later as a sweet filling for baked goods.

How to prepare candied zucchini
For making candied fruits, zucchini with dense pulp, preferably large ones, are suitable. When using young milk squash, there is a risk that the pulp will boil.
Vegetables are skinned using a knife or vegetable peeler and freed from seeds and fibers.
Peeled zucchini is cut into cubes measuring approximately 2 by 2 centimeters.The slices are placed in a pan and covered with granulated sugar. After 2 - 3 hours, the zucchini will give juice and the sugar will completely dissolve.
Fillers are added to the syrup with vegetable slices to enhance the taste. This could be lemon or orange zest, ginger, vanillin, citric acid or honey. Then the vegetables are boiled in syrup until translucent and sent to dry.
You can dry candied fruits at room temperature or in the fresh air. To do this, pieces of vegetables are laid out in one layer on flat plates and covered with gauze on top. It is advisable to make sure that the fabric does not touch future candied fruits. This design will reliably protect the product from dust and insects. Drying naturally takes quite a long time and takes 5 – 7 days.
An oven will help speed up the process. Place the prepared zucchini on baking sheets lined with baking paper. To prevent candied fruits from sticking to the surface, the parchment is greased with a thin layer of odorless vegetable oil. Dry candied fruits at a temperature of 90 - 100 degrees with the oven door slightly open. The drying time in this case will take about 4 – 6 hours.
You can also dry candied fruits in a vegetable and fruit dryer. Slices of boiled zucchini are placed on the racks of the drying apparatus at a short distance from each other. The temperature is set to the maximum value - 65 - 70 degrees, and candied zucchini is dried for 8 - 10 hours, rearranging the trays every hour and an hour and a half.

Candied fruits with citric acid and vanillin
Ingredients:
- zucchini – 1 kilogram;
- vanilla sugar – 1 sachet;
- citric acid – 1 teaspoon;
- granulated sugar – 300 grams.
Preparation:
Peeled zucchini slices are cut into small cubes and blanched in boiling water for 4 - 5 minutes. Then the vegetables are placed in a colander and cooled. Granulated sugar is added to the zucchini, and the container with vegetables is kept at room temperature for 6 - 8 hours. Add citric acid and vanilla sugar to the released juice, and then boil the contents of the pan until the liquid has practically evaporated. After this, the pieces of vegetables are sent to dry.
Candied squash with lemon
Ingredients:
- zucchini – 1 kilogram;
- sugar – 250 grams;
- lemon – 1 piece;
- powdered sugar - for sprinkling.
Preparation:
The zucchini is peeled and cut, covered with granulated sugar and allowed to brew for 3 – 4 hours. Peel the lemon and cut it into large slices, and squeeze out the juice from the pulp. Add lemon zest and juice to the pan with the zucchini. Then the vegetables are boiled in syrup for 30 minutes and allowed to brew at room temperature for 12 hours. Candied fruits are dried in any way. The dried slices are sprinkled with powdered sugar.
Candied zucchini with orange
Ingredients:
- zucchini – 1 kilogram;
- sugar – 200 grams;
- large orange - 1 piece;
- powdered sugar - for sprinkling.
Preparation:
Cover the zucchini slices with sugar and wait until a sufficient amount of juice is formed. Add the top layer of orange zest, cut with a grater, to the pan. The white peel is peeled off the fruit and the pulp is cut into small pieces. Chopped orange is added to the zucchini. Bring the fruit and vegetable mixture to a boil and cook for 5 minutes. Then the zucchini is cooled for 8 - 10 hours and boiled again. This sequence is repeated three to four times. After this, the zucchini is allowed to dry on a sieve and sent for drying.The finished candied fruits are rolled on all sides in powdered sugar.

Candied squash with honey
Ingredients:
- zucchini – 1 kilogram;
- sugar – 200 grams;
- orange or lemon – 1 piece;
- liquid honey - 4 tablespoons.
Preparation:
An orange or lemon, twisted through a meat grinder along with the peel, is added to the squash juice formed after sprinkling the vegetables with sugar. Honey is also poured there. After this, the syrup is put on fire and boiled for 5 minutes. Pieces of zucchini are poured into the hot mixture and boiled over low heat.
