Preparing the berries

To prepare candied fruits, you will only need firm berries without damage or rot. It is desirable that they all be approximately the same size. This will allow the candied fruits to dry more evenly.

The berries are washed under cool water and the sepals are torn off. Before cooking, place the strawberries on a paper towel and lightly dry them.
