Sweet bell peppers will make any dish much more attractive. And caviar prepared from tomatoes, peppers and carrots with onions, in addition to being a delicious dish in its own right, will perfectly complement and improve the taste of any of your first and second courses in winter. Don’t be lazy, make bell pepper caviar at home, especially since this is a very simple recipe.

Necessary products: sweet pepper - 5 kg, carrots - 300 g, onions 400 g, 200 g tomatoes, 2 cups of oil - any vegetable, salt - 50 g, 2 tablespoons of vinegar, black and allspice - 5 grams each, parsley root — 30 ​​g.

How to prepare pepper caviar for the winter.

Bake clean, dry and oiled peppers in the oven.

When it becomes soft, remove from the oven, peel the skin and remove the seeds.

Now our pepper is waiting for the meat grinder. It is better to take a grill with the largest holes and pass the pepper through it.

Now it's the turn of the tomatoes. We also pass them through a meat grinder and send them to the fire. Let it boil down by about half. When boiling, do not forget to stir regularly.

Cut clean carrots and parsley into strips, lightly fry and set aside.

Onions, cut into rings, are also sent along with the roots for frying.

As soon as the tomato paste reaches the required volume, add what we have prepared, season with salt, spices and cook for another ten minutes.

Quickly pack into jars.

Sterilize for 70 to 80 minutes. The duration of this procedure depends on the volume of the cans: 0.5 liter or 1 liter.

This caviar made from bell pepper is also called universal caviar. It’s good to add to meat dishes, great to borscht, and surprisingly tasty with pasta. And if you just put it on fresh bread, you will get real pleasure.
