Actinidia, or simply kiwi, has in recent years ceased to be an exotic, unprecedented fruit for many of us. Kiwi can be found in almost any store and at a very affordable price. These fruits are often consumed fresh: served as a dessert in combination with other fruits, decorated with emerald slices on cakes, and added to salads. But today we want to offer you a winter preparation from actinidia - homemade jam.

How to choose kiwi for making jam

When purchasing kiwi in a store, it is better to take the fruits individually, rather than in ready-made packaging. This will protect you from accidentally getting rotten fruit into the bag, and will also give you the opportunity to choose kiwi of the required density.

For jam, it is better to take fruits with dense, slightly unripe pulp. Fully ripened fruits are not suitable. They are too sweet and soft.

Immediately before cooking, the fruits are washed with warm running water and then the thick skin is peeled off. You can do this in two ways:

  • Using a sharp knife, cut off the peel from the entire fruit, as thin as possible.This cleaning is suitable if the kiwi later needs to be cut into slices or cubes.
  • The kiwi is cut in half, and then the pulp is scooped out from each half with a teaspoon. This method is suitable for making jam that does not require cutting into specific slices.

Classic version

Everything is simple here: take 1.5 kilograms of sugar and pour it over sliced ​​kiwi. 1 kilogram of fruit is required (peeled). Cut fruits in any way - into cubes, wheels or half rings.

Candied fruits should stand for 1-2 hours so that the sugar draws out some of the juice from them. The released juice will prevent the workpiece from burning to the cooking container at the initial stage.

The bowl is placed on the fire and heated slowly. To ensure that the remaining sugar dissipates faster, the jam is constantly stirred. The kiwi dessert is boiled for 20 minutes, and then the hot dish is put into jars.

With green grapes

To prepare, take 6 kiwi fruits and 200 grams of grapes removed from the branches (seedless). The best variety is “Kish Mish”. Peeled kiwis are cut into wheels 0.3-0.4 centimeters thick.

Boil the syrup in a wide-bottomed saucepan. To do this, mix 700 grams of sugar and ½ cup of water. The syrup should boil for about 5 minutes before adding fruit.

After boiling, kiwi with grapes are cooked over medium heat. Total cooking time is 25 minutes. Then the stove is turned off, and the jam is poured into storage containers.

With gooseberries

Required Products:

  • kiwi (peeled) – 300 grams;
  • green gooseberries – 300 grams;
  • granulated sugar – 3 cups;
  • water 150 milliliters.

It is better to take gooseberries that are green and, to balance the taste of the finished jam, sweet varieties. Before use, the berries are washed and the long tails are cut off on both sides.

To begin with, gooseberries are passed through a meat grinder, kiwi, cut into cubes or plates, and 1 cup of sugar are added to it. Mix everything and let it brew for 20-30 minutes.

Separately, boil the syrup from the remaining two glasses of sand and water. Gooseberry puree with kiwi pieces is added to the bubbling liquid. Cook the jam, stirring continuously, for 30 minutes.

Delicate kiwi jam with pear

Half a kilo of kiwi is cut into small cubes. Pears (3 pieces) are crushed in the same way. The skin of the fruit is first cut off. The variety of pears, in principle, does not matter, but it is better to choose fruits with stronger pulp. If you have summer pears, which are particularly juicy and oily, then the pear cubes need to be made larger.

The slices are transferred to a cooking pan and covered with 1 kilogram of sugar. To release the juice, mix the pears and kiwis and leave them alone for 2-3 hours. Juicy pear varieties produce a lot of juice, so there is no need to add additional water. If the fruit pulp was not juicy, then 30-50 milliliters of water are added to the main products before cooking.

The jam is cooked in two stages: first, the mass is boiled for 10 minutes, and then, after complete cooling, the cooking is repeated for the same time. At the same time, the fruit mass should cool slowly, at room temperature.

After boiling again, the dessert is placed in jars and sealed with screw-on lids.

With strawberry

For jam you only need ripe garden strawberries (500 grams) and the same weight of kiwi fruit.

The berries are thoroughly washed to remove sand. This is done using a sieve and a large pan. The fruits are freed from sepals and stalks, and then placed on a metal sieve. The grid with berries is lowered into a deep pan of water, and running water is turned on. Gently stirring the berries with your hand and rinsing them. In this case, all the sand and dust settle to the bottom of the pan.

The peeled berries are lightly dried on the same rack and then transferred to a cooking container. Strawberries are sprinkled with 600 grams of granulated sugar, and kiwi fruits, chopped into small cubes, are placed on top. The final layer is sugar (600 grams). In this form, the mixture of kiwi and strawberries is sent to the refrigerator for 12 hours to release the juice.

After the set time, the bowl of food is placed on the fire and the main stage of cooking the jam begins. It lasts 40 minutes. The finished dish is thick and very aromatic. To maintain the transparency of the syrup, the formation of foam is constantly monitored during cooking. Remove clots with a slotted spoon or a wide spoon.

With tangerines

Ten kiwi fruits are washed, peeled and cut into cubes. Four tangerines are thoroughly washed with a brush. Using a fine grater, peel the zest from one of the tangerines. Do this very carefully so as not to touch the white part of the peel.

Then all tangerines are peeled, including the fruit with the zest removed. The slices are cleared of white fibers and then cut in half. The seeds are removed from each opened tangerine segment.

The sliced ​​kiwis and oranges are placed in a wide bowl and sprinkled with 700 grams of sugar.The fruits are mixed and left on the table for 4 hours, covered with a lid or a clean towel.

When the juice is released, put the basin on the fire and add the cut zest. The jam is made using the double boiling method: first, the mass is boiled for 10 minutes, a break is taken for 8-10 hours, and then the dessert is brought to readiness by boiling it for another quarter of an hour.
